Recipe: Fig Jam

Fig Jam

2 qts. figs
4 c. sugar
1/4 c. lemon juice

Wash, stem and peel figs. Crush or chop figs. Cook slowly, stirring often until the mixture is thick (about 1/2 hour). Add lemon juice and stir. Pour into hot sterilized jars. Seal immediatedy. Process in boiling water 5 minutes. Remove jars, cool and store. Yield: 4 half-pint jars.
