Molasses Cookies

1 cup lard
1 cup molasses
1 cup light brown sugar
2 eggs, beaten lightly
4 cups sifted flour
1/2 teaspoon salt
2 teaspoons ginger
1 teaspoon cinnamon
2 teaspoons soda
1/4 cup hot water or coffee
Granulated sugar

Cream lard, blend in molasses, brown sugar, and eggs. Sift flour with slat, ginger, and cinnamon; dissolved soda in hot water or coffee. Add dry ingredients to creamed misture
alternatly with soda misture. Chill dough 3-4 hours. Flour hands and pick up a chunk of dough with tablespoon, roll in ball, and place on greased and floured cookie sheet. Flatten with wet cloth wrapped around a flat-bottomed glass. Sapce cookies 1 1/2 inches apart. Sprinkle with sugar and bake at 400 degree, for 10-15 min.

Makes 24 large cookies.
