Recipe: Fiesta Brunch Eggs

FIESTA BRUNCH EGGS

1/2 lb lean ground beef
1 pkg taco seasoning mix
1 cup (4oz) shredded jacj cheese
1 cup (4oz) shredded cheddar cheese
1/2 cup (4oz can) diced mild green chilies
1 1/2 cups milk
1/3 cup all purpose flour
8 eggs, beaten
Salsa

In medium skillet, brown grouond beef. Drain off excess fat. Stir in taco seasoning.

In 12x7 1/2 inch baking dish, toss beef mixture with cheeses and chilies.

In large bowl, blend a small amount of milk into flour until smooth. Stir in remaining milk and eggs.

Pour milk mixture over mixture in dish.

BAke at 350 for 40 to 50 minutes, or until knife inserted in center comes out clean.

Let stand 10 minutes before cutting into serving pieces. Spoon salsa over servings.
