Recipe(tried): Finnish Pancakes
Breakfast and Brunch Here's the recipe I use:
1 c. flour
1 1/2 c. milk
2 eggs
1/4 salt (optional)
2 tbsp. sugar
Blend flour, milk, egg, salt and sugar. Note: proportions are usually not exact. Batter should be the consistency of gravy or custard when it's just beginning to coat the spoon. Add more flour or milk as required.
The real trick is to get the pan the right heat. I use a cast iron fry pan with the heat just slightly past medium but my stove tends to be hot. Melt butter or margarine in frypan until just starting to brown. Pour in small amount of batter and tilt pan to spread. When air bubbles are showing through surface and pancake surface looks firm flip and brown other side very briefly.
Serve with syrup, berries, jam or even better cranberry sauce.
I'm from Thunder Bay with a finnish grandmother and we grew up with these things. They're good cold with sugar sprinkled on top and rolled up. (Note: I have another "Authentic" recipe that calls for a little bit of vanilla. This gives a sweeter flavour.
