Recipe(tried): Finnish Pancakes
Breakfast and BrunchI make the thin Finnish pancakes all the time, the only difference I use lots of eggs. Usally eight eggs, 3 or 4 cups of milk, 1/2 cup white sugar and flour to thicken. I pour batter into the frypan and when it covers pan with a thin layer and starts to bubble, I fry. If the batter gets too thick near the end, I add milk. it should taste sweet not like flour, if you test the raw batter. Enjoy! Lots of hot syrup and butter and or Lingonberry syrup is great!
