Pizza/FocacciaFoccacia bread
Brie cheese
Olive oil
Garlic powder
Onion powder
Oregano
Cheddar cheese
Foil
Cut foccacia bread in half long ways. Slice brie cheese and put into the
center of the bread. Close up bread layers like a sandwich. Brush top of
bread lightly with olive oil. Sprinkle remaining ingredients on top of
bread. Brush foil with olive oil. Wrap bread up and follow bread cooking
instructions. When bread is done, put on a plate with a knife. Slice the
first wedge for you guest. Guest will continue to cut on their own. Serve
hot.
ROSEMARY VEGETABLE FOCCACIA BREAD
1 lb. frozen bread dough, thawed
1 tbsp. green house fresh rosemary,
finely chopped
1/2 onion, minced
1/2 c. prepared pasta sauce
2 zucchini, thinly sliced
1/2 lb. mushrooms, sliced
1/2 c. green pepper, chopped
1/2 c. red bell pepper, chopped
3 tomatoes, thinly sliced
1/4 c. Parmesan cheese, grated
Place bread dough on lightly floured surface. Flatten slightly and spray
with olive oil spray. Sprinkle on fresh rosemary and onion and knead well to
mix thoroughly. Roll out dough to a 9x6 rectangle. Place on 9x12 baking
sheet. Press dough out until it fills pan. Spray bread with olive oil spray.
Bake at 400 for 10 minutes. Remove bread from oven. Top with sauce then
layer zucchini, mushrooms and peppers. Top with tomatoes and cheese. Return
to oven and bake 10-15 minutes. Makes 12 servings.
FOCCACIA
1 lb. pizza dough
1 can of plum tomatoes
2 tbsp. olive oil
1 tsp. oregano
1/4 lb. cured, pitted olives
1 tsp. thyme
Roll out the pizza dough and place into two small 8 inch round pie pans.
Pour a tablespoon of olive oil over the dough. Slice the plum tomatoes and
arrange across the top of the dough. Place the olive across the top as well.
Next, sprinkle the oregano and thyme onto the dough. Finally, drizzle the
last tablespoon of olive oil across the ingredients. Place the pie pans into
a hot oven at 450 degrees and bake for 10 minutes. Each bread serves to 2 to
4 persons.
FOCCACIA
1 1/2 tbsp. yeast
1 c. warm water (105 to 115 degrees)
2 tsp. salt
1/3 c. oil
1 tsp. sugar
3 c. flour
Dissolve yeast in water. In large bowl combine salt, sugar and oil. Add
yeast water; stir until salt and sugar are dissolved. Stir in 2 cups flour
until mixture is smooth. Add 1 cup flour; knead 5 minutes. Raise in greased
bowl 30 to 60 minutes. Can cut in half to make 2 small loaves or make 1
large loaf. Shape into circle on greased cookie sheet about 1 inch thick.
Dimple with end of wooden spoon. Drizzle with olive oil. Sprinkle with
cheese. Bake in 400 degree oven for 25 minutes.
