Freezing apple pie filling is very simple and will come in handy in the fall when it is apple season. Prepare the filling just as if you were going to bake it the same day, but put it in a freezer ziplock bag instead. Make sure you remove all the air that you can from the bag. To keep the apples from browning, I would add some lemon juice - a teaspoon should do. Good Luck!
