Recipe(tried): Freezing Corn

I think you guys are freezing corn the "hard way". Just cook your ears of corn in hot water as usual, and set cooked ears aside to cool completely. It's VERY important that the ears are cool before you cut the kernels off. The natural sugars in the corn (which is what makes it taste good!) will solidify again and stay in the kernels of corn. The cooled ears of corn are also much easier to handle!

Then freeze cut corn in plastic containers or Ziploc bags for future use. My mother taught me this trick, and we always get compliments on the fresh-tasting corn at Christmas time! This works very well if you are preparing a meal at the same time, because the corn can sit & cool while you're eating.
