FREEZING CORN THE EASY WAY
15 cups of fresh corn kernels
4 cups of very cold water (ice water preferably)
1/4 cup of sugar
a little less than 1/4 cup of salt
Husk corn and cut kernels from cobs. Measure 15 cups of kernels and set aside.
Mix together the water, sugar, and salt. Stir until sugar and salt are dissolved.
Stir in the raw corn kernels. Portion into in freezer bags or containers and freeze.
TO USE:
Corn will be raw when ready to cook. Cook until tender with the juice it was frozen with.
Easiest way I have found to freeze corn and it is so fresh and sweet! Enjoy!
