I dice and freeze onions all the time. They are a bit watery, but still very good for cooked dishes. I am always glad I have them when I go to cook something as they are already to go.
I just dice, put in individual bags measuring one cup per bag. I then put all the bags into tightly sealed plastic continers. If you don't get them sealed tightly they will smell up your freezer.
