HI ANGELMOM,
i take it that you want to use the zucchini for zucchini bread. i've been doing this for years. grate or blend zucchini in blender (the correct amount for the bread you wish to make. add the correct amount of oil that the recipe calls for. get some freezer bags and fill with mixture. flatten them to get all the air out. (it also makes them good for stacking one on top of the other) i've found that with the oil in them...they don't dry out and you can use them up to two years after you freeze them.
