As the others have said already, zucchini will freeze just fine. Another way to freeze it is in clumps on a cookie sheet. My mother in law freezes zucchini every time she gets it. It will last for a LONG time in the freezer too. If you do it in clumps on a cookie sheet, measure it (for instance 1 cup scoops), so that way, you can take out how ever many clumps you need for the recipe.
