Recipe: French Pear Pie

FRENCH PEAR PIE

6 cups peeled and sliced pears
2 tbsp lemon juice
1/3 cup sugar
1/3 cup all-purpose flour
1/2 tsp ground ginger
1/3 cup light corn syrup
1 unbaked 9-inch pastry shell
1/3 cup all-purpose flour
1/3 cup firmly packed brown sugar
2 tbsp butter or margarine

Preheat oven to 450 degrees F.

Combine pears and lemon juice; toss gently.

Combine sugar, 1/3 cup flour, and ginger; add sugar mixture and corn syrup to pears. Spoon mixture into pastry shell.

Combine 1/3 cup flour and brown sugar in a small bowl; blend well. Add butter; mix until crumbly. Sprinkle on pear mixture.

Bake at 450 degrees F for 15 minutes.

Reduce heat to 350 degrees F, and bake 30 minutes longer.

Yield: One 9-inch pie
