Recipe: Acorn Squash with Raisin Spice Sauce

ACORN SQUASH WITH RAISIN SPICE SAUCE

2 small acorn squash, halved lengthwise, seeded
1/4 cup orange juice
2 tablespoons raisins
1/8 teaspoon ground nutmeg
4 teaspoons butter or margarine, divided use

Heat oven to 400 degrees F.

Place squash halves, cut in 13x9 inch pan.

In small bowl, combine orange juice, raisins, and nutmeg; divide evenly among squash halves. Add 1 teaspoon margarine to each half. Fill pan with 1 inch of water; cover with foil.

Bake for 30 minutes. Uncover; bake an additional 20 to 25 minutes, or until squash is tender.

Makes 4 servings
