ERICA:
Good Afternoon. Here is the recipe for you.
Fried Fish (like Luby's)
2 cups water
1/4 cup fresh lemon juice
2 tsp. Worcestershire sauce
2 cups all-purpose flour
1/4 cup paprika
2 tbsp. seasoning salt (such as LAWRY'S)
6 or 7 fish filets (8 oz each) of choice, LUBY'S uses catfish (you can use Filet of sole as well as flounder or cod)
3 tbsp. vegetable oil (corn oil, safflower or peanut oil is of choice, not olive oil)
lemon slices or wedges to place in serving plate
In a shallow bowl, mix water, lemon juice and Worcestershire sauce; whisk and blend well.
In separate shallow bowl mix flour, paprika and seasoned salt.
Dip fish into water mixture, then into flour mixture, coating evenly and shaking off excess.
Heat oil in large skillet over medium heat, oil should be sizzling (a black iron fry pan is of choice if you have one.)
Add fish and fry approx 6-7 minutes on each side depending on thickness of filet (add a little extra oil if necessary). When done, fish should flake when touched with a fork. Garnish with lemon and parsley.
ERICA, the secret here is the paprika, that is what gives the rich color you expressed in your post.
LET US ALL KNOW HOW IT CAME OUT WHEN YOU MAKE THIS DISH.
