Recipe: Fried Radish Cake

Hi! I'm a Singaporean so I totally know what you're talking about. It's one of my fav food. There are 2 types...one that is fried with black sweet sauce and another that is left white. I have the recipe here with me but never tried it before becuz it was so convenient to just buy it at the hawker centre. Now that I'm in the US, I'm missing the convenience. By the way, when did you visit Singapore?

Here's the recipe. Good luck with it and let me know how it turned out.

250 g rice flour
2.5 cups water
0.25 tsp salt

-mix together to make a watery batter.600g pared shredded radish
0.5 cup water
0.75 tsp salt
1 tbsp sugar
1 tsp ground black pepper

30 g dried prawns, roasted and chopped
4 - 5 shallots, sliced and fired crisp ( do not overbrown)- Mix all up (excluding the last 2 ingredients) and put in a covered saucepan and cook over low heat for 10 - 15 min until radish becomes soft and liquid evaporates.

- Add dreid prawns and shallot crisps and pour in rice flour batter. Stir with a wooden spoon and cook for 3 minutes until mixture becomes a thick paste. Remove from heat.

- Pour into a greased 20 cm cake pan. Smooth the surface with a plastic spatula and steam over rapidly boiling water for 45 minutes. Cool thoroughly before cutting into slices. Frying
-Oil a wok generously. Fry a little garlic in it, then add in sliced radish cake. Crack an egg or 2 over the pieces of radish cake and scramble it up a bit. If you like, add some (you decide how sweet you like it to be) kechap manis (sweet black sauce) over everything and toss until eggs are cooked. Add some chopped or ground chilly if desired and garnish with chopped spring onions before serving. Eat it hot.
