Recipe: Fruit Custard Ice Cream

FRUIT CUSTARD ICE CREAM

BASIC MIX:
1 1/2 quarts light cream
1 cup eggs, beaten
1 1/2 cups sugar
1 tsp. vanilla
FRUIT MIX:
1/2 cup chopped nuts
1/2 cup diced bananas
1/2 cup diced pneapple (canned)
1/2 cup chopped maraschino cherries
1/2 cup chopped fresh strawberries*
1/4 cup sugar
2 tsp. fresh lemon juice
1/2 tsp. salt

Combine cream, eggs, and sugar. Cook over very low heat, stirring constantly until mixture coats spoon. Cool. Add vanilla.

Combine nuts, fruits, sugar, lemon juice, and salt. Let stand 5 minutes.

Pour basic mixture into freezer can, add fruit mix, freeze according to directions for ice cream machine.

*If you use frozen strawberries, omit 1/4 cup sugar for sweetened berries.

Makes 4 quarts.
