Sour Cream Cherry Pie (2)
Serving Size : 8
1 unbaked pie crust
2 cups sour pitted cherries
3/4 cup sugar
2 tbl flour
1 cup sour cream
1 egg -- well beaten
1/2 tsp vanilla
1/8 tsp salt
1 tsp cinnamon
3/4 cup flour
1/2 cup sugar
1/3 cup butter
Mix sugar, 2 tbl flour, sour cream, egg, vanilla and salt, beating till smooth. Add cherries and put in pie shell. Bake 15 min. in hot oven(425-450). Lower oven temp. to 325 and bake 30 min. Combine cinnamon, flour, sugar, and butter; sprinkle on top of pie and bake 20 min. longer at 325.Terrytx (10:54:47) :
Mom's Dewberry Pie

1 package refrigerated pie crusts
4 cups fresh dewberries or blackberries
1 cup sugar
2 tablespoons flour
2 tablespoons sugar
In a bowl, cover berries with 1 cup sugar and let stand 30 min. Meanwhile, line a 9" pie plate with crust according to pkg. directions. Combine flour and 2 tbl. sugar. Gently stir
flour mixture into berries. Spoon the berries into prepared pie crust. Top with remaining crust. Poke holes in top crust to allow steam to escape. Bake at 400 degrees until crust is golden brown.Terrytx (10:54:03) :
Georgia Peach-and-Praline Pie

1/2 (15oz) pkg refrigerated piecrusts
1 teaspoon flour
1/3 cup flour -- divided
1/4 cup sugar
1/4 teaspoon salt
1/4 teaspoon ground nutmeg
1/2 cup light corn syrup
3 large eggs
3 cups fresh peach slices -- chopped*
1/4 cup butter or margarine -- meled
1/4 cup firmly packed brown sugar
2 tablespoons butter or margarine -- softened
1/2 cup coarsely chopped pecans
Fit piecrust into a 9" pieplate according to pkg. directions; fold edges under, and crimp. Sprinkle piecrust with 1 tsp. flour, and set aside. Beat 3 tbl. flour, sugar, and next 4 ingred. at med. speed with an electric mixer 1 min. Stir in peach and 1/4 cup butter; pour in pie crust. Combine remaining flour and brown sugar in a small bowl; cut in 2 tbl. butter with a pastry blender until mixture is crumbly. Stir in chopped nuts, and sprinkle over peach mixture. Bake at 375 degrees for 45-50 min. or until center is set, shielding with foil after 35 min. to prevent excessive browning.

NOTES : *1 (16oz) pkg. frozen peach slices, thawed, may be substituted.

Fruit 'n' Nut Cherry Pie

1 (21oz) can cherry pie filling
1 (20oz) can crushed pineapple -- undrained
3/4 cup sugar
1 tbl cornstarch
1 tsp red food coloring -- optional
4 medium firm bananas -- sliced
1/2 cup pecans or walnuts -- chopped
2 9" pastry shells -- baked
Whipped cream
In a saucepan, combine pie filling, pineapple, sugar, corstarch, and foof coloring; mix well. Bring to a boil over med. heat, stirring constantly. Cook and stir for 2 min. Cool. Fold in bananas and nuts. Pour into pie shells. Chill 2-3 hrs. Garnish with whipped cream. Store in fridge.Terrytx (10:51:57) :
Creamy Pineapple Pie
1/4 cup sugar
3 tbl cornstarch
1 1/3 cups pineapple juice
1 egg yolk
2 cups fresh pineapple chunks -- 1/2" pieces
1 9" pastry shell -- baked
1/4 cup flaked coconut -- toasted
In a saucepan, combine sugar and cornstarch. Add juice; bring to a boil, stirring occasionally. Boil for 2 min. In a small bowl, beat egg yolk; stir in 1/4 cup of the hot mixture. Return all to pan; cook and stir for 1 min. Remove pan from heat; stir in pineapple. Pour into crust. Chill for 2 hrs. or till firm. Store in refrigerator. Sprinkle with coconut just before serving.

NOTES : 1 20oz plus 1 8oz can of canned pineapple tidbits can be substituted for fresh. Drain, reserving juices. Add additional pineapple juice to equal 1-1/3 cups.NON-FRUIT PIES:

KARO NUT PIE

Serving Size : 8
1 cup sugar
1 cup Karo syrup
3 large egg -- beaten
1 Tablespoon vanilla
1 cup pecans -- chopped
1 teaspoon salt
1 unbaked pie shell -- deep dish
Heat oven to 375 degrees.
Mix all ingredients(except pie shell) thoroughly.
Pour into pie shell. Top with pecan halves if you wish.
Bake for 40-50 minutes or until firm in middle.
VARIATION: Chocolate pecan pie - add 3/4 c. Chocolate chips and replace vanilla with cream de cocoa.

FUDGE PIE

Serving Size : 8
3 squares chocolate
1 stick butter
1 cup sugar
1/4 cup flour
2 eggs
Melt chocolate and butter in double boiler. ( i put in a metal bowl in the oven for just a minute to melt)
Mix flour and sugar.
Beat eggs and combine with flour mix.
Add chocolate mix.
Pour into well greased 9" pie pan.
Bake at 350 degrees for 30-45 minutes.
Serve warm topped with ice cream.
