Recipe: Buffet Beef Ring with Sweet and Sour Cherry Sauce (meat loaf)

2 lb ground beef
1 1/2 cups fine dry breadcrumbs
1/2 cup milk
1 egg, slightly beaten
2 tbsp finely chopped onion
1 tbsp parsley
2 tsp salt
1/8 tsp pepper
1/2 tsp Worcestershire sauce
Hot cooked rice (for serving)
Combine ground beef with remaining ingredients, except rice, mixing thoroughly. Turn into an oiled 8 1/2-inch ring mold.
Bake at 350 degrees F for 1 hour and 10 minutes.
Turn ring out on platter. Fill with steamed rice. Serve topped with Sweet and Sour Cherry Sauce.
SWEET AND SOUR CHERRY SAUCE
Makes 3 cups sauce
"Serve over fried chicken, pork chops, ham steak, decorative meat loaf."
1 (16 oz) can dark sweet cherries
1 tbsp cornstarch
1/3 cup brown sugar
1/4 cup vinegar
1/4 cup water
4 green onion, sliced diagonally
1/2 green bell pepper, cut in strips
1 (4 oz) can water chestnuts, drained
Drain cherries, reserving syrup. Mix cornstarch and brown sugar in saucepan. Gradually add cherry syrup, vinegar and water. Bring to a boil, stirring constantly. Stir and cook until thickened and clear. Add cherries, green onion, green pepper and halved water chestnuts. Heat gently. Serve over Buffet Beef Ring.
