I'm not much of a chef and I don't really measure anything but I can tell you how I make Gateaux Diane.
Start with a , you need 3 rounds so you can sandwich them together.
Whip up a half pint of cream and gently melt some chocolate. Mix the melted chocolate and cream together (Fold it when the chocolate is still warm but cool enough so as not to melt the cream.)
Start with a base of pavlova then a layer of choco-cream, repeat twice.
I garnish with grated chocolate and a strawberry. Stick it in the fridge where it turns into a moussey kinda chocolate heaven and voil ! Hope this helps!
