German Chocolate Lace Cookies

Makes: 18
3 oz. German sweet chocolate
1 1/2 Tbsp. milk
6 Tbsp. softened butter
1/2 cup brown sugar
1 tsp. vanilla extract
1/4 cup flour
1/4 tsp. baking soda
1 cup quick-cooking oats
1/2 cup flaked coconut
1/2 cup finely chopped, toasted pecans
2 tbsp. powdered sugar
Filling and Glaze
12 oz. milk chocolate chips
1 oz. German sweet chocolate
1/2 tsp. oil
Heat oven to 350F. Line cookie sheets with parchment paper. Melt chocolate with milk and set aside. Beat butter and brown sugar until light and fluffy. Beat in chocolate mixture and vanilla. Beat in flour and baking soda. Stir in oats, coconut and pecans. Drop by rounded teaspoonfuls 3-inch apart on prepared cookie sheets. Bake 10 min. until cookies spread out into thin rounds and are lacy in appearance. Lift parchment off sheets and transfer to racks. Let cool completely.
Carefully peel cool cookies from paper. Sift powdered sugar over cookies.
Filling and Glaze
Melt chips. Place 1-2 t. melted chocolate on top of flat side of one cookie. Top with another, flat side down, and gently press to spread the filling. Repeat with remaining cookies. Melt German sweet chocolate and oil. Using fork, drizzle glaze over cookies. Let stand until both filling and glaze are set.
