Recipe: German Kuchen

German Kuchen

1 stick butter
3/4 c. sugar
2 eggs
1 1/4 c. flour
2 tsp. baking powder
1/2 tsp. vanilla
1 c. milk

Cream together butter and sugar. Add eggs and beat well. Sift together flour and baking powder. Add alternately flour and baking powder with milk and vanilla to the butter, sugar mixture. Beat thoroughly. Bake in floured and greased kuchen pan or 10-inch cake pan for 20 to 30 minutes at 350 degrees. Let set 5 minutes, then turn out on rack to cool. Fill top of cake with fruit (canned, frozen or fresh): strawberries, blueberries, combination of pineapple, peaches, apricots and maraschino cherries. Top with glaze. Serve with whipped cream.

Glaze:
1 pkg. glaze or 2 tsp. cornstarch
3/4 c. sugar
1 c. fruit juice or water
Mix glaze and sugar, stir in juice. Bring to boil and pour over fruit on kuchen. If cornstarch is used, cook until thickened.
