Recipe: German Onion Pie

ONION PIE
(Germany)
(Yield: 6 servings)

4 thick slices bacon, diced
2 cups chopped onions
2 eggs, beaten
1 cup sour cream
1 tablespoon all-purpose flour
1/2 teaspoon salt
1/4 teaspoon pepper
1 9-inch pie shell, unbaked
Preheat oven to 400F.

In a large skillet, saut bacon until lightly browned. Drain most of the fat from skillet. Add onions; saut until translucent. Set aside to cool. In a medium bowl, beat eggs and sour cream. Sprinkle flour over top. Stir in salt and pepper. Prick the pie shell with fork. Spread onion mixture over bottom. Pour sour cream mixture over top. Bake for 15 minutes; reduce oven temperature to 350 F. Continue baking for 15 minutes longer or until pie is golden brown. Serve hot.
