I spent Wednesday in my son's classroom at school making this icing for Gingerbread Houses. It depends on the weather/humidity as to exact measurements - but start w/ this.
2 pounds of confectioners sugar
5 egg whites*
1 1/2 to 2 Tablespoons Cream of Tartar
Mix together until when you pull the beaters out it drips SLOWLY off. Add egg white or sugar as needed to thin or thicken.
*Use pasteurized egg white if icing will be eaten.
