Gingerbread Pizzelles
6 eggs
1 cup sugar
1/2 cup brown sugar
1 tsp. cinnamon
1 tsp. ginger
1/2 tsp. cloves
1/4 cup molasses
1 cup butter, melted
4 tsp. baking powder
4 cups flour
In a large mixing bowl, mix eggs and sugars together, add the spices and molasses and mix well.
Add the melted butter, mix, then add the baking powder.
Add the flour and mix well.
Drop one heaping teaspoon of batter on preheated pizzelle iron grid. Close iron and bake according to manufacturer's directions approximately 30-40 seconds depending on your preference for browning, or the consistency of the batter.
The flavor is much better if they are baked and allowed to cool.
