Gluten-and Wheat-Free Fritters A Yummy Dessert Idea

INGREDIENTS:

2 eggs (large or jumbo)
1-3/4 cup milk
1 cup rice flour
2 cups soy flour
1 cup nut flour (grated almond is a favorite)
1 Tablespoon baking powder
1 cup granulated sugar
1 large banana or medium apple chopped coarsely
Confectioners' (powdered) sugar
Cinnamon and/or nutmeg

PROCEDURE:

Heat oil in deep fryer to 350 degrees F.
In medium bowl, mix together dry ingredients.
In large bowl, mix eggs and milk well, and add dry ingredients in thirds.
Combine thoroughly.
Fold in fruit.
Drop batter off a spoon into hot oil in golf-ball sized mounds. Fry in small batches in
deep fryer until brown on all sides, turning as needed.(About five minutes total.)
Drain on paper towels briefly, then roll in confectioners' sugar mixed with cinnamon (with
or without nutmeg) to taste.
Be cautious when rolling in the sugar, these babies are hot!
Makes about 2-dozen golf-ball sized fritters.
