Recipe: Curried Rice and Carrots (with garlic and shallots)

Side Dishes - Rice, Grains
CURRIED RICE AND CARROTS

2 tsp butter
2 tbsp shallots, chopped
1 tsp garlic, minced
1 bay leaf
2 tsp curry powder
1 cup uncooked rice
1 carrot, cut into thin strips
1 1/2 cups unsalted chicken broth

Melt the butter in a saucepan and add the shallots and garlic. Cook briefly, stirring, and add the bay leaf.

Sprinkle with curry powder. Add the rice and thin carrot strips, stirring. Add the broth and cover. Bring to a boil and let simmer for 17 minutes or until rice is done.

Makes 4 servings
