Recipe: Good Pie Crust

Foolproof Pie Crust
This is my "Old Reliable":
3 c. flour
1/2 tsp. salt
1 1/4 c. crisco shortening
1 egg
1 T. vinegar
1/3 c. water
Mix flour and salt and cut in Crisco. Beat egg and mix with vinegar and water. pour egg mixture into flour mixture and mix until all flour is absorbed. Roll on floured board. Makes 2 double crust 9 inch pies or four single shells. Bake shells at 400 degrees for 10 to 12 minutes or until desired brownness.
This can be re-rolled and remains tender and flaky.
You might try this coconut custard pie:
COCONUT CUSTARD PIE
3 eggs
1 1/4 c. sugar
1/4 c. melted oleo
1/3 c. buttermilk
1 tsp. vanilla
1 1/2 c. flaked coconut
1 unbaked 9-inch pie shell
Beat eggs and add next four ingredients. Mix well. Stir in coconut. Pour into pastry shell. Bake at 350 degrees for 45 minutes or until set. The buttermilk gives a wonderful flavor!
