GRAHAM PUDDING SANDWICHES
(Diabetic Friendly)
1 (4-serving-size) package sugar-free chocolate instant pudding, prepared*
1/2 cup creamy peanut butter
64 graham cracker squares
Prepare pudding according to package directions. Mix in peanut butter.
Spread 1 tablespoon of mixture on 1 graham cracker square and top with another graham cracker square. Place on cookie sheet lined with wax paper and freeze. (Sandwiches can be individually wrapped in waxed paper and stored in a container in the freezer.)
TO MAKE A CHOCOLATE COVERED VERSION:
Remove cookie sheet from freezer and dip each sandwich in melted chocolate. Return to freezer until hardened. Please note that this will add some additional sugar to the sandwiches, but it does make for a nice treat.
*You can experiment with other sugar free pudding flavors, but try to stick with ones that will go well with peanut butter. The peanut butter in this helps to stabilize blood sugar levels and prevent rapid sugar spikes since it is a protein source which causes sugars to be absorbed by the body at a slower and more steady pace.
