WALKERSWOOD SHRIMP SAUCE
(the Hops recipe)
1 cup white wine
1/4 cup lemon juice
1 tbsp sugar
1 tsp salt
1 tbsp peppercorns (ground will make spicier)
1 cup heavy whipping cream
3 tbsp jamaican jerk seasoning (or half of a 2.12 oz jar)
Mix wine, lemon juice, sugar, salt, and peppercorns in saucepan and boil off 1/4 the mixture.
Slowly add in heavy whipping cream stirring with whisk continuously, until slightly thickens (only approximately 2 or 3 minutes, if that).
Remove from heat and strain. Add Jamaican jerk seasoning.
Wonderful on skewered shrimp off the bar-b-que.
