Recipe: Sweet and Spicy Grilled Fruit Skewers (using rum and brown sugar)

SWEET AND SPICY GRILLED FRUIT SKEWERS

"The smoky heat of chipotle chile pepper combines with pleasantly sweet cinnamon to give these tropical fruits a sensational seasonal twist. Embark on a fantasy island getaway in your own backyard."

Prep time: 15 minutes
Cook time: 10 minutes

1/2 cup brown sugar
1/4 cup rum
2 teaspoons McCormick Pure Vanilla Extract
1/2 teaspoon McCormick Ground Cinnamon
1/2 teaspoon McCormick Ground Ginger
1/4 teaspoon McCormick Chipotle Chile Pepper
1 large pineapple, peeled, cored, cut into 2x1-inch pieces
2 ripe yellow bananas, peeled, cut into 2x1-inch pieces
Vanilla ice cream (optional, for serving)

Stir first 6 ingredients in a small bowl until sugar dissolves. Set aside.

Thread fruit alternately onto 6 double skewers.* Brush with spice mixture. Let stand 5 minutes.

Grill or broil fruit skewers 10 minutes or until golden brown, basting with spice mixture and turning occasionally.

Serve with vanilla ice cream if desired.

*To prevent pieces of fruit from spinning around as you turn kabobs, thread fruit onto two parallel skewers for each kabob. (Soak wooden skewers for 15 minutes before using.)
