OVEN LEMON CHICKEN WITH LEMON BASTE
1 (3 pound) frying chicken, cut up
1/2 cup flour
1 tsp salt
1 tsp paprika
4 Tbsp butter, melted
FOR THE LEMON BASTE:
1/4 cup lemon juice
2 Tbsp minced onion
1 Tbsp oil
1 clove garlic, minced
1/2 tsp thyme
1/2 tsp salt
1/2 tsp ground black pepper
Coat chicken pieces in mixture of flour, salt and paprika, then coat with the melted butter. Arrange skin side down in a 13x9-inch baking pan.
Bake at 375 degrees F for 30 minutes.
While chicken bakes, combine the ingredients for the Lemon Baste; set aside.
After the first 30 minutes of baking, turn the chicken pieces and spoon the lemon baste over them. Bake 30 minutes longer.
