Grilled Lamb Chops with an Herb Yogurt Marinade
Servings: 4
4 lamb chops, loin, no visible fat
1/2 pkg. basil, rosemary and oregano herb bouquet
1 Tbsp chopped fresh garlic
3/4 cup nonfat plain yogurt
- fresh ground black pepper
1 Tbsp Worchestershire sauce
2 cups spinach, cooked from fresh
Remove the leaves from the stems of herbs and chop finely. Mix all of the ingredients in a bowl and add the lamb chops. Coat them well with the marinade and leave covered in refrigerator overnight. Remove from the marinade, leaving much of mix sticking to the meat. Grill over a medium heat for 5 minutes on each side for medium rare. Serve over one half-cup of steamed fresh spinach.
