Recipe: Had a little dinner for "the girls" on
Misc.Saturday nite, thought I should pass on a couple of the recipes.
The chicken marsala recipe ended up posted on the TKL Cooking
Club board, but the accompanying vegetables are going to end up
here. They are a great side dish for company or for a holiday
party, particularly because they are red & green. And, of course,
for dessert, we had the infamous Italian Love Cake.
Green Bean Bundles
2 lbs whole green beans, trimmed
8 scallions incl. long green stems
1 red pepper, cut into 1/4 in. thick strips
1/3 C. butter
1 clove garlic, finely chopped
1/2 tsp crushed thyme
1/4 tsp white pepper
Cook beans in salted water 3 min. Plunge into ice water.
Drain. Blanch scallions 15 seconds. Remove & pat dry. Cut
onion off stem.
Gather a serving size bundle of green beans. Tie a scallion
stem around the beans. Knot. Place bundles in buttered 8 in.
square pan. Slip several red pepper strips under the knot.
Melt butter in small pan. Saute garlic 3 min. Add thyme &
pepper. Pour over beans. Cover & refrigerate. Bring to room
temperature. Bake & 375 deg. F. for 7-10 min. until heated
through. Yield: 8 servings
NOTE: If you don't want to go to the trouble of bundling the
beans, you can put them in a shallow pan or casserole, mix
the red pepper strips throughout & pour the butter/herb
mixture over them. Bake as directed.
