PORK AND GREEN BEAN CASSEROLE
This is a quick easy casserole that only takes a bit to throw together and only two pots to make.
4 to 6 pork chops
1 medium onion, finely chopped
1 to 2 teaspoons minced garlic
2 tablespoons olive oil
1 to 2 teaspoons Old Bay Seafood Seasoning
1/2 to 1 teaspoon ground black pepper
2 cans (1 lb each) French cut green beans (more if you want to stretch this recipe.)
4 cups Minute Rice
1 (10 3/4 oz) can condensed cream of mushroom soup
1 jar Garlic and Parmesan Cheese Pasta Sauce
grated cheese (for topping)
Now take the pork chops and debone them and cut the chops into bite sized pieces. Making sure to cut them small enough for your smallest guest. (That means small enough for a child to eat without cutting, if children will be eating this)
Place onions and garlic together in a large skillet with olive oil (about 2 tablespoons). Starting cooking the onions uncovered until the just begin to become translucent.
Add pork pieces to skillet and sprinkle with seafood seasoning and pepper (freshly ground pepper is best) Fry the meat and onions until the meat is browned and cooked through.
While meat is cooking open green beans and drain the juice from them and use for cooking Minute Rice adding additional water as needed. Cook Minute Rice using juice from green beans till done.
Once meat is cooked through and onions are tender add rice, mushroom soup, and pasta sauce together in the large skillet you cooked the meat in. Stir together well mixing soup and sauce together with rice and meat and onion mixture.
Sprinkle grated cheese over top of casserole and return to heat and cover and heat until just starting to melt cheese.
This is great served with garlic bread or bread sticks.
