Recipe: Ham and Swiss Rolls with Apricot Sauce

HAM ROLLS WITH APRICOT SAUCE
sliced ham (lunch meat can work as long as it's good quality and not cut too thin)
sliced swiss cheese
cornbread stuffing (I just follow the directions on the box)
Preheat the oven to 350F.
Lay out a piece of ham, put some cheese on it and some stuffing and roll it up (like a long tube). Place it in a cookie sheet or a 9x13-inch pan. Repeat, laying them side by side in the pan. Keep doing this until you have enough.
Bake them until they are heated thru (about 20 minutes) and the cheese is melted. Serve with apricot sauce.
APRICOT SAUCE:
Apricot jam
Orange juice
Cornstarch
Put some jam in a saucepan, and heat.
Mix some cornstarch with some orange juice. Stir the juice and cornstarch mixture into the jam.
Heat to a boil, stirring constantly. If the sauce is too thick, add some more juice. If too thin, add some more juice with cornstarch and thicken again.
