Ham Drop Biscuits

Makes 14 biscuits
2 cups all-purpose flour, preferably bleached
2 teaspoons sugar
2 teaspoons baking powder
1/2 teaspoon baking soda
Pinch salt
6 tablespoons unsalted butter, chilled and cut into cubes
1 cup buttermilk
2 tablespoons chopped chives
1/2 cup coarsely chopped ham
Preheat the oven to 450 degrees.
In a food processor fitted with the metal blade, combine the flour, sugar, baking powder, baking soda and salt. Process for 30 seconds to mix. Add the chilled butter cubes and pulse until the mixture resembles coarse cornmeal. Add the buttermilk and pulse just until combined. Transfer the dough to a bowl and fold in the chives and chopped ham.
Drop generous dollops of dough on an ungreased baking sheet, using a large spoon to scoop up about 2 tablespoons of the dough and another spoon to push the dough off onto the sheet. Place the dollops of dough about 2 inches apart.
Bake the biscuits in the preheated oven until golden brown, about 14 minutes. Serve warm.
