Recipe: Not-So-Guilty Fettuccine

Not-So-Guilty Fettuccine

1 lb fettuccine, cooked per package directions
1 tsp olive oil
1 clove garlic, minced
3/4 cup light sour cream
1/2 cup 1% cottage cheese
1/4 tsp each salt and pepper
1 egg
3/4 cup 2% milk
1 cup chopped ham (optional)
1/2 cup freshly grated Parmesan cheese
1 Tbsp chopped fresh parsley

Heat oil over medium heat; cook garlic for 30 seconds. Stir in sour cream, cottage cheese, salt and pepper; heat through. Whisk together egg and milk; whisk into sour cream mixture. Stir in ham and Parmesan. Bring almost to a boil; reduce heat to medium-low and simmer gently for 5 to 7 minutes. Toss with pasta. Sprinkle with parsley.
