Recipe(tried): Ham Salad for Sandwiches

In your food processor or blender, grind up ham--don't grind it up a lot at this point. By the time you add everything else, you'll finish grinding up the ham.

Add chunks of celery, a little onion if you want it, some sweet pickles, a little parsley. Turn on for a couple of seconds. Again, don't overprocess.

Add a little mustard and some mayo or salad dressing. Turn on for a couple of seconds. By now, the ham should be ground up and the celery and onion should be finely chopped up. Add the amount of mayo you want to make it the consistency you want.

I always do this with leftover ham. Sometimes I use this mix to fill mini cream puffs for a party or New Year's Eve. Makes a nice party food.

As you can see, you really can't go wrong with this. Change the amount of each ingredient to suit your family's taste.
