Harvest Stuffed Peppers
These are peppers stuffed with quinoa (pronounced keen-wah), chick-peas, onion, and zucchini so the recipe might work for you for your potluck dinner. You could also try making a casserole out of it by adding cooked peppers to the quinoa mixture, rather than stuffing them. As you are probably aware, quinoa is very high in protein. It is a grain that is native to Peru and has become widely available in the U.S.
I'm sorry that I didn't post this sooner but it has been a busy week:-( I hope you can possibly still use it. It is quite easy to make.
