Helen's Husband's Deeeelicious Cheese Spread

Helen's Husband made this for their Daughter's wedding and then for an office potluck.

1 1/2 pound sharp cheddar cheese
1/6 pound Monterey jack cheese
1 (5 1/4 oz) can or jar Spanish olives with pimento (salad olives) not the kind that are stuffed
1 green bell pepper
1 pound bacon, cooked and crumbled
3 cups mayonnaise

Put everything except mayonnaise through the meat grinder. Mix in
mayonnaise. It works well to put the whole mess into a ziptop bag and then knead it. Serve with bread or crackers.

It also makes good fancy finger sandwiches. Makes enough spread for 4 loaves of bread. The spread can be made a week ahead of time and kept cold. Then put sandwiches together just before event or serve with fancy crackers ( won't dry out like bread).
