Making a good pot roast can be really quite easy, here's what I do:
I get a boneless chuck roast and season it with a mixture of salt, pepper, garlic..I pat a little flour on the roast.
Brown the roast in a little crisco, until brown on all sides.
Then I put the roast into a roasting pan & slice onions all over the top.
In the pan that I browned the roast in, I add one can of beef consume soup, Worchestershire sauce ( about 3 Tablespoons) & a bit more pepper. Stir this into the browned bits left from browning the roast. Pour this over the roast in the roasting pan.
I then cover the roasting pan tightly with foil and bake at 275- 300 degrees for 4 -5 hours.
It comes out fork tender and very tastey.
You can use the sauce for gravy. I usually thicken it a bit with a mixture of a little flour. (mix a little flour & water to make a paste-like consistancy, then stir this into the gravy).
I usually serve this with mashed potatoes and some type of vegetable.
If you want, you could peel potatoes & carrots and add them to your roast right in the pan, just make sure to recover it. If you do that I would wait & add in the last hour & a half before you plan to eat.

1/2 Stick butter
6 Tablespoons brown sugar -- heaping
4 bananas -- sliced
1 Tablespoon banana liqueur
1 Tablespoon light rum
2 Tablespoons brandy
vanilla ice cream

Mix butter and brown sugar in skillet. Cook over medium heat until sugar is melted. Slice bananas in halves or quarters and add to butter mixture, cooking until tender. Add liquer and stir. Sprinkle rum and brandy over top. Ignite. Spoon gently a few times. Serve warm over vanilla ice cream.
