Recipe: Holiday Mint Pie

Holiday Mint Pie
Taste of Home Cooking School/Fall 2000
Plan ahead...needs to refrigerate for at least 3 hours

1 pkg (8 oz) cream cheese, softened
1/3 c sugar
1 carton (12 oz) whipped topping, thawed, divided (Cool Whip)
2-3 drops green food coloring
1 c chopped Keebler Fudge Shoppe Grasshopper Cookies (about 10)
1 (6 oz) ready crust Chocolate Pie Crust
Mint leaves or chocolate leaves, optional

In a large mixing bowl, mix cream cheese and sugar at medium speed until well blended. Fold in 3 cup whipped topping, food coloring and cookies. Spoon into crust.

Refrigerate for at least 3 hours or until set. Garnish with remaining whipped
topping. Decorate with mint leaves, if desired.

Note: Refrigerate or freeze cookies before chopping...they chop easier and stay more intact in the filling.
