Recipe(tried): Pineapple Pie

I don't know about pineapple rolls, but I have a recipe for pineapple pie that I got from my ex-mother-in-law. It was the best thing she ever made(much better than the son I got from her haha!). However, no matter how many times I made it, I couldn't get quite the same consistency or flavor that hers had - so I'm guessing she left something out, but it still tastes fantastic! Here it is:

PINEAPPLE PIE

1 (1 lb) container sour cream
1 large package instant vanilla pudding
1 (8 oz.) can crushed pineapple in heavy syrup*, drained
1 graham cracker pie crust

In a large mixing bowl combine sour cream and dry pudding mix. Beat with electric mixer on medium until well-blended.

Add pineapple and beat on low until well-blended but not smooth. Quickly spread into graham cracker pie crust.

Refrigerate(covered) at least 8 hours (24 hours is best).

*Substitution: pineapple in its own juice plus 2 Tbsp sugar
