Home Canned Apple Slices

19 pounds of apples are needed for 7 quarts of sliced apples

Peel, core and slice apples. Treat for discoloration; drain.

Make a syrup by bringing water and sugar to a boil in a large saucepan. Add the sliced apples and heat to boiling. Boill for 5 minutes.
(4 1/4 cups water and 4 1/4 cups sugar)

Remove from heat and immediately pack the apples into hot canning jars. Leaving 1/2 inch headspace. Add the hot syryp. Leaving 1/2 inch headspace. Carefully run a non~metallic untensil down the inside of jars to remove trapped air bubbles. Wipe jar tops and threads clean. Place hot lids on jars and screw on rings. Process in a boiling water canner for 20 minutes for both pints and quarts.
