Recipe: Homemade Applesauce (repost)

Hello Jean,

The Presto Pressure Cooker site has this safety warning:

"Never pressure cook applesauce, cranberries, rhubarb, split peas, pearl barley, oatmeal, or other cereals, noodles, macaroni, or spaghetti."

HOMEMADE APPLESAUCE
From: Judy/AZ 5-20-1998

6 medium apples
2 Tbsp. sugar
1 Tbsp. cinnamon
3/4 c. water

Core and peel apples; place in saucepan with water. Place on medium heat until apples are soft; add cinnamon and sugar. Put in blender. Blend until smooth. (You can also leave the sauce chunky.)

Applesauce
From: Donna,Pa 7-24-1998

3 pounds apples (about 9 medium)
1 cup water
1/3 to 2/3 cup sugar
1/4 tsp. cinnamon or
2 whole cinnamon sticks

Core, peel and quarter apples. In a heavy pot, place apples, water, sugar, and cinnamon,if desired. Bring to a boil and reduce heat. Cover and simmer for 8 to 10 minutes or til apples are tender, adding more water if necessary. Remove from heat and mash with a potato masher or process in blender or food processor to desired texture. Serve warm or chilled. I also freeze applesauce in ziplock bags allowing about 1 inch for head space. Makes about 4 and 1/2 cups. Note: Most of the time, I triple this recipe to make it worthwhile.

Fresh Applesauce
Hobbs 11-23-1998
3 to 4 servings

8 Granny Smith apples, peeled, cored, and cut into thin slices
1/2 cup sugar
3/4 cup water

Combine all the ingredients in a large pot; bring to a boil over medium-high heat. Reduce the heat to low, cover, and simmer for 50 to 60 minutes,
stirring occasionally.

Cranberry Applesauce
2 cups fresh cranberries
8 Granny Smith apples, peeled, cored, and cut into thin slices
3/4 cup sugar
3/4 cup water

Cinnamon Applesauce
8 Granny Smith apples, peeled, cored, and cut into thin slices
1/2 cup cinnamon red-hot candies
1/2 cup sugar
3/4 cup water

Rum Raisin Applesauce
8 Granny Smith apples, peeled, cored, and cut into thin slices
1 cup raisins
1/2 cup sugar
1/2 cup water
1/2 cup light or dark rum

Pear Applesauce
4 Granny Smith apples, peeled, cored and cut into thin slices
4 pears, peeled, cored and cut into thin slices
1/2 cup sugar
3/4 cup water

NOTE: Adjust your cooking time to get the texture you like - for chunky applesauce, cook it less; for smooth applesauce, cook it more. And if your apples aren't really juicy, you may need to add a bit more water during the simmering to prevent scorching.
