Recipe: Abisinthe Lollys (lollypops)

ABISINTHE LOLLYS
(step by step pictures)

YOU WILL NEED:
confectionery (candy) thermometer
candy molds
pan, wooden spoon, stove
lollypop sticks

5 shots absinthe
1/4 cup cream of tartar
1/3 cup golden syrup
1 cup sugar
1/2 cup water

Place the sugar, water, syrup and cream of tartar in a pan and heat on the stove. Stir until the sugar starts to melt and dissolve. When the mixture starts to boil stop stirring.

When the temperature reaches 300 degrees F take the pan off the heat.

When the temperature drops to 150 degrees F add the absinthe.

Pour the mixture in to the molds and place the lollypop sticks in to them. Leave them to set for 20 minutes and then remove them carefully from the molds.
