Recipe: Homemade Tomato Soup (using onion and garlic, blender)

2 tablespoons olive oil
1 onion, chopped
1 clove garlic, chopped
6 tomatoes, peeled and chopped
4 cups chicken stock
Salt and pepper, to taste
Handful fresh basil leaves
In a soup pot, heat the oil over medium heat. Cook the onion, stirring often, for 10 minutes.
Add the garlic and cook 1 minute more.
Add the tomatoes, stock, salt, pepper, and basil. Bring to a boil and simmer 15 minutes.
In a blender, puree the soup in batches. Reheat until hot.
Makes 4 servings
