CHICKEN CACCIATORE
1 frying chicken, cut up
1/2 cup flour
2 tsp. salt, divided use
1/4 tsp. ground black pepper, divided use
1/2 cup Wesson oil
2 onions, chopped
1 (16 oz.) can tomatoes
1 (8 oz.) can tomato sauce, such as Hunt's
2 cloves garlic, minced
1 1/2 tsp. oregano
1 tsp. celery seed
Coat chicken with flour mixed with 1 teaspoon salt and 1/8 teaspoon pepper. Brown in hot oil in deep fry pan. Remove chicken.
Cook onions until soft.
Add tomatoes, tomato sauce, garlic, oregano, celery seed, remaining 1 teaspoon salt and 1/8 teaspoon pepper and chicken. Cover and simmer 40 minutes or until tender, turn occasionally.
Makes 4-6 servings
