Recipe: Quick Trick Fudge and Chocolate Fudge (using instant cocoa mix)

QUICK TRICK FUDGE

1 1/2 cups sugar
1 cup Hershey instant cocoa mix (with sugar)
3/4 cup milk
1/4 cup butter
1 cup pecans

Combine sugar, cocoa mix, milk, and butter in a saucepan. Bring to a boil over high heat. Turn to lower heat and continue boiling until mixture reaches 234 degrees F. Remove from heat and cool to 110 degrees without stirring. Beat for 4 minutes and add pecans and pour into a greased pan.

Yield about 20 (1 1/4 inch) squares.


CHOCOLATE FUDGE

1/2 cup Karo corn syrup
1/2 cup butter
1 cup milk
3 cups sugar
5 tbsp. hot cocoa mix (with sugar)
1 tsp. vanilla (optional)
chopped nuts (optional)

Cook Karo syrup and butter until thoroughly mixed. Add other ingredients. Cook to soft ball. Cool to about 110 degrees. Beat until creamy. Add 1 teaspoon vanilla and nuts if desired. Pour into buttered pan.
